Below, I have written some of my favorite recipes that I have come up with over the last few years. I will continue to add additional recipes periodically.
Homemade Taco Seasoning:
In a small bowl, whisk all ingredients until homogenous.
Yields ~ 10 Servings.
Recommend using 3 TBSP per pound of meat or meat substitute.
1 TBSP Chipotle Chili Powder
1 TSP Ancho Chili Powder
1/2 TSP Onion Powder
1/2 TSP Garlic Powder
1/4 TSP Crushed Red Pepper Flakes
1/4 TSP Oregano
2 1/3 TBSP Cumin
1/2 TSP Sea Salt
1 TSP Fine Ground Black Pepper
Homemade Enchilada Sauce:
Stir all ingredients in a saucepan over medium-low heat until all spices bloom and flavors meld together.
28 oz Passata
1 Cup of Vegetable Stock
3 TBSP Chili Powder
1 TSP Hatch Chili Powder (Red)
1 TSP Ancho Chili Powder
1 1/2 TBSP Cumin
1 TSP Dried Minced Garlic
1 TSP Dried Minced Onion
1 TSP Kosher Salt
1 TSP Ground Black Pepper
1 TBSP Pureed Chipotle in Adobo
1 TBSP Honey
1 TBSP Lime Juice
1 TBSP Ketchup
